Benefits of vegetables and spices in Kimchi

Napa cabbage leaves contain vitamins C, B, and other minerals: potassium, calcium, iron, magnesium and sulphur.
Spring onions are low in calories but contain high amounts of vitamins K, C, A, folic acid and a lot of fibre.
Carrots are high in beta-carotene and fibre. They are a source of antioxidants, vitamin A, C, K, B8 and a source of iron and copper.

 

Ginger strengthens the immune system, acts as a prevention of various types of cancer, has strong anti-inflammatory compounds.
Chilli contains capsaicin, acts as cancer prevention, cardiovascular disease prevention, contains a number of minerals.
Garlic contains quercetin and allicin, a powerful antioxidant that has anti-inflammatory effects. It has antiviral properties, which have long been known.

Onions contain flavonoids, and some are converted to similar substances as allicin. It has a positive effect on the body, including an antiviral effect.
White radish prevents some types of cancer, strengthens the immune system, helps reduce inflammation, helps with respiratory problems.
